The tandoor
Opened in the 1990s by brothers Roshiel and Rafael Samekhov, Rokhat still bakes the Bukharan way: dough slapped in rows onto the walls of a clay tanoor oven.
The bake happens where you can watch it. Flatbreads come out blistered and stamped, and the counter stays stacked with the day's bake. Vegetarian baked goods are available. Entry is walk-in with no stairs.
Samsa and pies
Sesame-topped samsa, hand pies, and strudel, baked in-store. Reviewers call the samsa the best in the city.

Giant parabolic noni toki rounds, stamped non, lepyoshka, and an array of leavened and unleavened flatbreads from the tandoor wall.
